Ingredients

  • 1/4 cup butter or margarine, softened
  • 1 cup sugar
  • 3 eggs
  • 1 1/2 teaspoons vanilla
  • 1/2 cup light molasses
  • 3 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 1/3 cups sour cream
  • 1/2 cup brown sugar (packed)
  • 1/2 cup finely chopped nuts
  • 1 1/2 teaspoons cinnamon
  • Method

    • 1. Preheat your oven to 350 degrees Fahrenheit. Grease a tube pan (10x4 inches) or two loaf pans (9x5x3 inches).

    • 2. In a large mixer bowl, combine the butter, sugar, eggs, vanilla, and molasses. Beat on medium speed for 2 minutes or give it 300 vigorous strokes by hand.

    • 3. Mix in the flour, baking powder, baking soda, and salt alternately with the sour cream.

    • 4. If you're using a tube pan, spread 1/3 of the batter (about 2 cups) in the pan. Sprinkle with 1/3 of the filling (about 6 tablespoons). Repeat this process two more times. If you're using loaf pans, spread 1/4 of the batter (about 1 1/2 cups) in each pan. Sprinkle each with 1/4 of the filling (about 5 tablespoons). Repeat.

    • 5. Bake for 55 to 60 minutes, or until a wooden toothpick inserted in the center comes out clean. Allow the cake to cool slightly in the pan(s) before removing.
