  • 1 jalapeno, seeds removed and finely diced
  • ¼ cup of chicken or vegetable stock
  • 1 cup of corn kernels
  • 1 cup of shredded lettuce
  • ¼ cup of cilantro, snipped
  • Method

    • 1. To make the slaw, mix together in a large bowl the shredded white cabbage, mayo, pureed chipotle pepper and sauce, and citrus juice. Season with salt and pepper to taste. Set aside.
